Tannery Run Brew Works Announces Chef Gina Cavalier

Tannery Run Brew Works ( coming really soon to Ambler!) just announced Gina Cavalier as their chef. Gina grew up cooking alongside of her father and learned her love of food and the culinary arts at a young age. In the latest Tannery Run newsletter, Gina’s bio reads:

Gina was born in Florida and later relocated to the Philadelphia suburbs as a teen. She grew up cooking in the kitchen with her father where she first learned of her love of food and the culinary arts.

After a couple of years back in Florida to study at the University of Miami, she enrolled in the Culinary Institute of America in Hyde Park, NY and graduated with honors. After graduation, she was recruited to The French Laundry in Yountville, California to intern under Chef Thomas Keller. Gina spent four years honing her skills, as well as absorbing and refining modern French techniques. From there, she moved to New Orleans, Louisiana where she had the privilege of working under and alongside Chef Emeril Lagasse at the renowned NOLA Restaurant in the warehouse district.

Gina has since worked in a wide spectrum of restaurants and cafes. Most recently she was working in the Mountain West as a private chef for a fly fishing ranch. There she was able to study the cuisine of that region and increase her knowledge of wild game. She established a core group of influential people, for whom she began privately cooking and combining their love of food and fine wines. Gina’s background is in French Creole cuisine, but she is most interested in fusing flavors together to create beautiful pieces of art that people enjoy eating.

With Gina at the helm of the Tannery Run kitchen, you will find an eclectic menu that combines flavors from around the world and local seasonal ingredients whenever possible. Be prepared for something beautiful to the eye and something tasty to the palate.
